Washoku (和食) is traditional Japanese cuisine, characterized by seasonal ingredients, balanced nutrition, aesthetic presentation, and deep cultural significance—recognized by UNESCO as Intangible Cultural Heritage.
Washoku emphasizes five elements: five flavors (sweet, sour, salty, bitter, umami), five colors (white, black, red, yellow, green), and five cooking methods (raw, grilled, steamed, boiled, fried). Staples include rice, miso soup, grilled fish, and pickled vegetables. Unlike the term ‘nihon-ryori’ (Japanese cooking in general), washoku specifically denotes traditional, seasonal practices with philosophical foundations in Zen Buddhism and harmony with nature.
Washoku differs from ‘Japan ryori’ which is broader. Kaiseki is the most formal washoku; home-cooked teishoku is casual washoku. UNESCO recognition elevated washoku’s prestige internationally. Fast food Japanese restaurants may claim ‘washoku’ loosely; authentic washoku respects seasonality and ingredient sourcing.
和 (wa, Japan/harmony) + 食 (shoku, food) = washoku. Literally ‘harmony food’ or ‘Japanese food.’
