Gunkan-zushi (軍艦巻き) is a distinctive sushi form shaped like an oval warship (gunkan), with a belt of nori (seaweed) around the sides holding loose toppings like roe, sea urchin, or mayonnaise-based fillings.
Unlike rolled sushi (maki), gunkan-zushi has an open top, letting chefs showcase beautiful toppings and create combinations without rolling. The boat-like shape allows diners to enjoy texture contrasts: creamy sea urchin against crisp nori, or popping roe against vinegared rice. Popular toppings include uni (sea urchin), ikura (salmon roe), maguro (tuna), and modern variations with spicy mayo or avocado.
